The Shun Classic 8-inch Hollow Ground Chef’s Knife is a premium Japanese kitchen knife designed for versatile, high-performance food preparation. The blade features a VG-MAX stainless steel core, delivering excellent edge retention, corrosion resistance, and fine-grain sharpness. It is clad in 68 layers of Damascus stainless steel, enhancing durability while producing Shun’s signature layered pattern. What sets this model apart is the hollow-ground (granton) edge, which creates small air pockets between the blade and food. This reduces drag and helps prevent ingredients from sticking—especially useful when slicing vegetables, proteins, and dense foods. The blade is sharpened to a 16° edge per side, providing significantly greater cutting precision than traditional Western kitchen knives.
